Maple Lane Café is one of Taigum’s newest stores – having only opened in April of this year. In today’s Q&A, Fabio Strati, the owner of Maple Lane Cafe, talks about his experience in hospitality, the loyal customers of Taigum Square, and what makes the perfect latte!

Q. When did you first open your business and how did it come to life?
A. I opened the business in April this year. I have been working in hospitality since I was in my teens, and have owned a number of cafes over the years. Maple Lane was a concept for a café that I had been putting together for a little while. I wanted to create a relaxing vibe that was inviting and cosy for my customers. Our wonderful team worked tirelessly for many months to get the concept, design, fit-out and menu perfect. We are pretty stoked with the outcome!!
Q. Why did you pick Taigum Square?
A. The first time I visited Taigum Square, I knew it was the right fit for Maple Lane. The Centre had a great energy and flow, and there was not yet anything like Maple Lane in the area. I saw the opportunity to do something different here, and to offer the local community something a little bit special. In every venture I embark on, I focus on offering my customers a point of difference, while ensuring that our offerings are always consistent and of the highest quality.
Q. What do you love about this area?
A. I love the locals, many of whom have become loyal customers very quickly! There is such diversity in terms of visitors to the centre, from young families through to more mature patrons. This keeps our job fun and exciting! I am an old school ‘owner operator’, so majority of the time you will see me at the front of house, enjoying chatting with our customers.
Q. What made you fall in love with your industry?
A. I have always been passionate about coffee and good food. The hospitality industry was therefore a natural fit for me. I love this industry because it has always allowed me to be creative and bring my visions to life. It brings me great satisfaction to be able to provide customers with what they want, and to share with them good hospitality and quality food and coffee offerings. Each café I open is designed with my clientele front of mind.
Q. What are your barista tips for creating the perfect latte?
A. If you are using milk alternatives such as almond or soy milk, make sure you invest in a good quality milk!! It will make or break your coffee!
